Sam, his fusion cuisine between France and India
Samikannu Samson, was our chef and your so smily teacher, started his career in Relais et Châteaux in Provence, France, precisely in Grasse, The French Perfume city. Indeed, after his diploma at the Institute of Hotel management and Catering Technology of Tamil Nadu in 1999, he was the first Indian to benefit a Relais et châteaux internship.
From a Tamil family who loves cooking, with parents who kept intact the traditional tamil and pondichery flavors, Sam knows also how to mary spices and create delicious indian dishes.
So, when he came back to Pondichery, he worked in many big restaurants where he inpressively gave his own touch blending French gastonomy delicacy with Tamil cuisine subtlety.
He created Fusion Cuisine, fruits of his experience and experiments in Indo French ways of cooking.
Sam knows definitely well how to share his love of good food from these two rich countries !
