Lemon rice

Right now, sun is shining either in Pondicherry or elsewhere in Europe!
So we give you a perfect refreshing recipe, traditional for Pondicherry picnic on the beach!
It goes well with pickles and sautéed meat and so is a delicious quick bite to eat.

This is lemon rice (the tamarind version is as yummy too)!


ingredients :

500g rice
10 curry leaves
4 dry red chilies
Sesame oil
6 to 8 green small lemons or 1 to2 big yellow ones
½ tsp turmeric
½ tsp asoefetida
½ tsp black mustard seeds
½ cc urad dhal
Wash well the rice and drain. Cook as 1 cup of rice for 2 cups of water until complete evaporation (around 20min). Keep aside and let it cool.
In a pan, roast mustard seeds along with chilies in a small amount of oil.
Add quickly curry leaves, salt, turmeric and asoefetida.
Mix together rice, lemon juice and roasted spices.

You can enjoy directly or keep it in the fridge for a while and enjoy it cool later on. Bon appétit!
